I'm moving to New Zealand to finish my master's degree - I'll be moving to Dunedin and was wondering if anyone could give any tips about searching for and securing housing. I've passed that "party 'til you die" stage of life, so no real interest in staying in digs with a posse of frat boys or sorority sisters.

I'm also based in Dunedin and also studying to get my master's :) This is pretty much a college town, so on the whole, housing will most likely be below the standard you're used too. That said, there's still some good accommodation if you know what you're looking for.
Keep in mind that most houses in New Zealand are poorly insulated, which means during winter (and believe me it gets cold) you'll need heat and electricity is expensive. Make this a priority when searching for a place. Look for something that gets lots of natural sunlight, has a fireplace, a wood burning stove, and doesn't carry a dampness.
You may end up paying a bit more, but it's well worth it when you can see your own breath in your lounge.
