Hi, Im wanting to join my spouse in Canada once i have completed my diploma of early childhood education at TAFE. I want to become a teacher (special ed) but it seems so complicated when I try to research. I need to know what my study options are. Can i get credit transfers or am i able to start into a course like bachelor of education? What can I do? I don't know where to start

I would suggest you to check on the government website for immigration conditions for education assessment. It is done by different institutions depends on your specialty.
When you know which institution assess your degree, go extra mile and order/pay for the assessment. This will prove how many credits can be transferred and if you need to prove your education further or it is enough.
Then I would check Bridging program in University of Toronto. This program is created specifically for foreign trained specialist and counts your credits and give you only subjects you need to comply with local level. After this program you receive local diploma that would be your equivalent or even more.
Or you can start from contacting local university with online courses and consult with them which courses you are missing in your diploma and can take in their university online.
