We're moving to Vancouver, and I was wondering if my 8-year old needs to have a knowledge of French to be enroled in a Canadian school?

No, if you're moving to Vancouver your little one won't need to know French to attend a Canadian School. With the exception of Quebec, the primary teaching language in all Canadian provinces is English. That said, most schools do have children learn French as part of their standard curriculum - those these classes are not intensive and children rarely achieve fluency.

If you want your child to develop a firmer French foundation there are French immersion schools located throughout the nation.
