Hey,
I travelled to Fiji last year and totally fell in love with the place. At christmas, I am returning but I have plans to stay their more long-term.
Just have some questions regarding work visas. I am struggling to find a job in Fiji at the moment so what I am hoping is that once I arrive I can start networking and interviewing for positions. Then once I've got the job I will just change my tourist visa to a work permit. Does that make sense ?
Anyone got any experience with applying for a visa for Fiji ? Does it take long?

To be honest with you Fiji is not a popular destination for expats looking for work. Getting a work permit for Fiji is not a straightforward process. Applications are decided on a case by case basis.
You or the employer basically need to find ways to prove that the position you are taking up cannot be adequatley filled by a Fijian citizen.
You plan to go Fiji and find a job and then apply for a work permit won't work. The Department of Immigration will only accept your application from overseas, so you will have to leave the country first. You'll need to rethink that plan.

Good luck,
